What is OZ? Can anyone give me some details about it please. I'd be really greatful

I suspect you are referring to Open Zaurus. OpenZaurus is a free ROM Image for the Zaurus.

Official 2.4.6-rmk1-np2 kernel sources + the Lineo Embedix patch which is also used in the Sharp ROM.

The following are patches applied to the OpenZaurus kernel which are not applied to the Sharp kernel:

Latest HostAP Prism2 wireless drivers.
Boot logo change.
Latest socket/symbol spectrum drivers and orinoco drivers.
Compile fix in af_irda to build irda as modules.
The OpenZaurus kernel also features an altered configuration, including wireless extensions support.

Filesystem
The entire filesystem is structured differently than the Sharp ROM. OpenZaurus is a new distribution built from the ground up, based on debian. There is no symlink structure, as flash is writable, which makes the filesystem much cleaner and, imho, more sane.

OpenZaurus also includes OpenSSH (Client and Server) by default, and uses the C version of ipkg (the package manager), rather than the shell version. It also includes new versions of numerous packages.

Graphical User Interface
OpenZaurus uses the Opie graphical environment. Opie is a fork of the Qtopia codebase, and involves the efforts of numerous programmers in the community.
